Gaspard does not manage the exploitation even if he still advises his son who works with the same requirement of quality. “Even if I always helped my father in the fabrication of his products, I firstly have a restaurant in Cozzano for some years. But when my father decided to retire I forgave everything to follow him” Dominique says.
Today Dominique runs fully its exploitation that he develops and modernizes little by little, however his brother is responsible of the market of Ajaccio: “Our customers are used to see us on the market and know our products, so it was important to go on our presence and my brother is excellent for this task”, simply says Dominique Cesari, an artisanal and traditional making reassures people.
